  • chicken: Use boneless, skinless chicken breasts of similar sizes so they cook evenly. In this recipe, I use 5-7 ounces of breasts.
  • Oil: Olive oil helps the seasoning stick and helps brown. Any lightweight tasting oil can be used.
  • Seasoning: In the recipe below, I used a simple seasoning mixture. You can use your favorite blend to buy or the mixture in the spice cabinet.

  • Cooking time: My first tip is to make sure the chicken doesn’t cook as it’s very thin. Use a meat thermometer and cook to 165°F.
  • Cooking temperature: I cook on high heat to keep the outside brown while keeping the meat tender. Bake chicken breasts at 400°F for 21 to 26 minutes.
  • Rest time: Let the meat rest after cooking so that the juice recycles it back into the meat and makes it juicy.

  • Preheat the oven to 400°F. Gently lubricate the framed baking tray or arrange it with parchment paper.

  • In a medium bowl, mix together chicken breast, olive oil, Italian seasoning, seasoning salt, chili powder and black pepper. Mix well onto the coat.

  • Transfer the chicken to the prepared pan and bake for 21 to 26 minutes, or until the chicken breast reaches an internal temperature of 165°F.

  • Transfer it to a board or cutting board for 5 minutes before cutting into a board.

  • Cut into thin slices and drizzle with juice.

The smaller chicken breast will take close to 21 minutes and the larger chicken breast will take close to 26 minutes. For best results, use an instant read thermometer.
