- chicken: Use boneless, skinless chicken breasts of similar sizes so they cook evenly. In this recipe, I use 5-7 ounces of breasts.
- Oil: Olive oil helps the seasoning stick and helps brown. Any lightweight tasting oil can be used.
- Seasoning: In the recipe below, I used a simple seasoning mixture. You can use your favorite blend to buy or the mixture in the spice cabinet.

This chicken is versatile and you can use your favorite seasoning mix such as Greek seasoning, Cajun seasoning or a simple lemon pepper mixture.
Cook: Add the whole mushrooms, slice the onion, slice the zucchini and colorful bell pepper strips, and bake the instant vegetable side dish.


Juicy chicken tips
- Cooking time: My first tip is to make sure the chicken doesn’t cook as it’s very thin. Use a meat thermometer and cook to 165°F.
- Cooking temperature: I cook on high heat to keep the outside brown while keeping the meat tender. Bake chicken breasts at 400°F for 21 to 26 minutes.
- Rest time: Let the meat rest after cooking so that the juice recycles it back into the meat and makes it juicy.

Leftover chicken breast/meal
Store the remaining roasted chicken breast in an airtight, covered container in the refrigerator for up to 4 days. The chicken can be sliced or chopped and frozen to prepare for meals.
Enjoy chilli chicken on a Cobb salad or chicken salad. In the microwave, reheat in a pot on the stove, or wrap it in foil from the oven. Add chicken to a roasted Mac, cheese or chicken pot pie.

Grilled chicken breast is a simple and delicious – perfect for dinner or preparing meals!

Prevent the screen from becoming dark

Preheat the oven to 400°F. Gently lubricate the framed baking tray or arrange it with parchment paper.

In a medium bowl, mix together chicken breast, olive oil, Italian seasoning, seasoning salt, chili powder and black pepper. Mix well onto the coat.

Transfer the chicken to the prepared pan and bake for 21 to 26 minutes, or until the chicken breast reaches an internal temperature of 165°F.

Transfer it to a board or cutting board for 5 minutes before cutting into a board.

Cut into thin slices and drizzle with juice.
Chicken breasts can range from 5 ounces to 10 ounces in size. The cooking times listed are used for average size boneless breasts, 5 ounces to 7 ounces each.
If the chicken breast on one end is very thick, smash it with a meat mallet to a more even thickness.
Place the chicken in an airtight container in the refrigerator for up to 4 days. In the oven, heat on the stove in the pot or in the microwave. Alternatively, add chicken breasts to soup, salad or casserole!
