I’m not sure about you, but I don’t want to spend a lot of time working in a steaming kitchen when it’s hot outside. But we all have to eat, so pasta salad is often my go-to choice for the summer.

The pasta can be cooked in just a few minutes and once you drain, all the hot work is done. Rinse the pasta in the cool water, chop some vegetables and ham, and stir it with the dressing. If you ask me, meat, vegetables and pasta equals a full meal.

What kind of pasta makes the best pasta salad? When it comes to pasta salads, very small, bite or smaller pasta is the winner.

Ideally, the pasta should be small enough to get one or two pieces in each bite. In my opinion, the best pasta for this job is Ditalini or Elbow Pasta.

  • Cook the pasta according to the instructions on the package, adding a lot of kosher salt to the water while cooking. Just before making the cooking noodles, add broccoli to the pan. Let the broccoli boil for about 30 seconds, then drain everything into a large funnel. Rinse well with cold water.

  • Whisk together mayonnaise, vinegar, salt, pepper and sugar. Add the cooked pasta and broccoli to a bowl and stir well.

  • Add the ham, cucumber, pepper, red onion and green onion, AMD parsley, and stir again. Taste and adjust the seasoning if needed. Cover and refrigerate until ready to serve. Stir again before serving.

If you forget to throw broccoli into boiling water at the end of the pasta cooking time, you can also steam it in the microwave. Place broccoli and a tablespoon of water in a glass bowl. The microwave lasts for 60-90 seconds until the broccoli is bright green and hardly soft.
