Lemon Blueberry Ice Cream – Nude in the Kitchen

You don’t need to do this ahead of time, but you do need to make sure it’s been cold before adding it to the ice cream. When the ice cream is stirred freshly, it is very soft and needs to be transferred to a container to harden (or mature) the container in the refrigerator.

Add blueberries, ¼ cup sugar, corn starch and water to a small pot. Set the heat to medium low and stir occasionally until the berries are soft. This should take 2-3 minutes.

Mash the berries a little with a potato masher and stir constantly while the liquid smoke and the sauce thickens, about 2 minutes. Remove from heat and cool completely, then place it in the refrigerator and cool until cold.

In a large bowl, stir the condensed milk and lemon juice well until completely smooth. Add lemon zest, cream, milk, ½ cup sugar, salt and vanilla. Stir well. Pour into your ice cream manufacturer and process according to the manufacturer’s instructions.

Place the freshly stirred ice cream oop into a refrigerator-safe container and drizzle the blueberry sauce as you add more containers to each spoon. Put in the refrigerator until ready to serve.
