Spicy Chicken Sandwich Recipe

These simple chicken sandwiches are absolutely deliciousserved with tender chopped chicken, rich and creamy homemade lime mayonnaise, and marinated jalapeno. You will love how fast they are together!

I’m always happy when we have left the chicken in the house as my head usually turns to these chopped chicken sandwiches. We used to live near an incredible Vietnamese restaurant that sells the most delicious BánhMì sandwiches. These chopped chicken sandwiches were inspired by that restaurant.

I love baguettes, with its crispy crust and soft interior. Perfect for filling with delicious chopped chicken, vegetables, fresh coriander and that bright lime mayonnaise. You can stop there, but I love these spicy so we piled on pickled jalapeno or Adam’s favorite jalapeno jam for a glare.

  • chicken: Chopped chicken is ideal for this sandwich recipe. You can chop leftover grilled chicken or barbecue from the store. Or, try starting from scratch. I love this stove-chopped chicken recipe and slow cooker chopped chicken.
  • French bread: You can use a variety of breads, but I love the French bread for this sandwich. Look for one that is crispy on the outside but not too hard on the inside. You want it to be a little soft, which means it’s easy to take a bite.
  • vegetable: I keep the sandwich simple with lettuce and tomato, but to really lean towards the idea of ​​BánhMì you can add chopped carrots or some pickled daikon and carrots.
  • Lime Mayo: I like to add extra flavor to the mayonnaise, so for this we whisk the lemon oil and juice into the mayonnaise and season with salt. If you prefer, you can start with homemade mayonnaise!
  • Jalapeños: These add a spicy layer to our sandwiches. If you want a sweet and spicy variation, try denim candy (also known as candy jalapeno) instead of the traditional pickled jalapeno.

Before building the sandwich, remove a little bread to fit more chicken! For chicken, use leftovers or barbecue chicken.     1Make Lime Mayonnaise: Stir 1/2 cup mayonnaise with a lime ferment and juice. Season with salt and black pepper.

    2Making sandwiches: Cut the French bread in half to make two smaller French breads and cut lengthwise. Using your fingers to hollow out the interior, creating more space for the chicken.

    3Spread the inside of the bread generously with lime mayonnaise. Then, layer the lettuce, tomato, chopped chicken, marinated jalapeno and cilantro. Close the sandwich and cut it in half for ease of consumption.
